Salmon Burgers

As I said in my previous post I’m completely fed up of meat! I feel like such a carnivore at the moment but I found this great recipe for salmon burgers on Teresa Cutters website (http://www.thehealthychef.com/2013/06/salmon-burgers/)

I used tinned salmon as it was super quick and only required four ingredients. Tinned salmon (including the bones) is super rich in calcium and magnesium too.

Ingredients 

185g tinned wild salmon (drained)

1 organic egg

1 spring onion (sliced)

1 tbsp Parsley (chopped)

Combine the salmon, egg, parsley and spring onion, then season with freshly ground black pepper. Have a look at your mix and test cook a batch to see it holds together when cooked. Place spoonfuls of the salmon mixture into a pan and cook over a medium heat with a splash of olive oil for 1 – 2 minutes each side until golden.

We served ours with a wedge of lemon, avocado and a green salad.

    Nice recipe. You don’t have to have meat proteins all the time. You can have a meat free day, it won’t hurt, esp if you consume things like avocado with plenty of fats you should be fine. Also, beware of tinned salmon or tuna – 80% of its goodness is taken out in the cooking and tinning of such foods… read up on it. Occasionally is fine, but tinned foods are high in salts too so you don’t want to have them often.
