Lamb Stew

I borrowed a colleagues slow cooker and made a really simple lamb stew. This dish is so hearty and comforting and also freezes really well.

Even though we’ve only just started on our Whole30 journey I can already see just how important being organised is to our success! If you have healthy options there and ready to go there can be no excuses for slip-ups!

We bought a whole lamb a few months ago and I asked the butcher to keep all of the bones so I could make my own stock. It’s so simple (recipe to follow!)

The actual preparation for this stew takes 10minutes and then you just let the slow cooker do it’s thing!

Ingredients

  • 1kg of diced lamb
  • 2 carrots
  • 1 butternut squash
  • 1 sweet potato
  • 2 small onion
  • 2 celery sticks
  • 3 cloves of garlic (finely diced)
  • 1 portion of lamb stock
  • Salt and black pepper
  • 1/2 teaspoon of rosemary
  • 2 teaspoon of paprika
  • 1 can of chopped tomatoes (watch out for added salt and sugars when purchasing)
  1. Roughly peel and chop the vegetables as necessary
  2. Add all the ingredients together in the slow cooker
  3. Set to low and cook for six-eight hours
